Today, I outdid myself! I made 4 dishes. I am so proud of me. My hubby’s pretty excited as well that I am magically becoming a better cook. Usually, making one meal is exhausting on a weekday. If I take on a couple I know i’m not getting done before 11pm, and by then we have usually filled up on too many snacks. Besides, when I take on too much I usually have screw ups as I start rushing to wrap up a giant mess I have created all over the kitchen.

To be fair two of them were easy peasy recipes. They are my staples and I have made them successfully numerous times.

These two beauties are being delivered to a new mommy with three babies. Three babies is a LOT of babies. Everything is fresh and made from scratch. I have an obsession with avoiding cans, store-bought sauces, packaged goods (esp with expiration date that could out-live me), and anything that has high fructose corn syrup listed as an ingredient. I refuse to feed the monster (if that wasn’t clear I was referring to Monsanto). My goal is to make everything by hand so I can be rest assured I know exactly what goes in my food. And I can tweak the taste according to my wishes. I am by no means a healthy eater. I am willing to ravage anything that I get my hands on. But when I’m cooking, suddenly I become all natural and mostly organic.

I found recipes for these two in a magazine I just picked up at the grocery store. Kind of tired of searching for dinner ideas for free on google. They turned out a-mmm-azing. Baked sweet potatoes and brocolli rabe. When I saw the recipe called for brocolli rabe I almost read it as “brocolli” and proceeded to buy brocolli, but lucky me my hubby likes to go over everything I do (lol), he pointed out this was a type of brocolli and not the typical brocolli crown and so I ended up getting the right one. He pays attention to detail.

 

Shockingly I produced some well put together timely meals today. Not one but four! And after doing my day job. Miraculously, everything was ready before 9pm! So, what was different about today. I was organized and planned ahead. We bought everything last night. I prepped everything last night. And while cooking reused the same two dishes for everything! My mess was contained better than ever before.
